Meal Planning – 8/23

So, after BlogHer, being sick, sick dog, and throwing a baby shower, I took a look at my bank balance today. Oof!  I had already planned on recovering by eating out a lot less, but I think I am going to try to pledge no eating out (maybe even including coffee) between now the end of September.  I grant myself the following exceptions:

  • Once a week I give up get out of jail free
  • The State Fair (we usually go this coming Sunday)
  • Any travel related meals (I am doing a business trip mid September for five days)

So, to help me stick with that, I am meal planning, heavily.  I’m even going to post about it, ala my fave meal planner City Mama.  It is cooling off, mostly, so it should be a lot easier to stick to.  Bonus, I have something to post on Monday now.  Items with a * are local.  Here is the plan for the week:

Monday – Sausage from Kramarczuk’s (Krakowska)*, green beans*, rosemary potatoes*, heirloom tomatoes*.

Tuesday – Homemade version of chili mac with lean ground beef, and whole grain pasta (yay one pot meals)

Wednesday – Chicken (greek style), peppers*, feta cheese, bread, my brother’s homemade tzatziki (this may switch with Tuesday, if I get the chicken marinaded)

Thursday – Sausage from Kramarczuk’s (Hungarians like at the Twins stadium)*, sweet corn, tomatoes

Friday – Pot roast (meat share) *, potatoes*, onions*, carrots*, garlic*, herbs*

Saturday – Chicken (meat share*, whatever else I find at the farmer’s market

Sunday – Kabobs (meat share)*, with peppers*, onions* and some fresh tomatoes

We’ll see if I make it.  Right now, I should be able to.  Should I run in to any issues, I do have some backup options including good old noodles and tomato sauce.  Even A can cook that.

    Don’t forget Ratatouli (or how ever you spell it) I just did the roasted version adding fresh basil when it is all roasted and yummy. Now that all the ingredients are in season, yeah, tomatoes, eggplant, peppers, summer squash, garlic, onions….so simple and so tasty.
